World’s Largest Bowl of Spaghetti

Although I’m always a big fan of cooking at home, I do enjoy going to restaurants with friends and family.  And in celebration of Buca’s “World’s Largest Bowl of Spaghetti” day today, I’ll be chowing down on some pasta!  To work up such an appetite, I spent the day today in a food safety class.  I should be getting my certification in the mail in the next couple weeks, but it is the first step in getting the “business” portion of my business underway.  Luckily there are not too many more hoops to jump through before I can start taking on my first clients and sharing more food with all of you.  Taste tests begin with friends next week.  I’m so excited!

Food is so much fun!

This is the first blog entry I’ve ever written, but at least it’s about a topic I absolutely love – food!  Here I’ll be recording some of my new recipes, my experiments, and news about my business. Tonight was a simple dinner…mixed greens salad and lemon chicken.  But, as usual, I made it with a twist.

The salad – mixed greens, crumbled feta, “candied” walnuts, fresh raspberries, and a home made raspberry vinaigrette.  Loved it, but next time I’d leave the fresh raspberries off the salad and just add more of them to the dressing.

Lemon chicken – made it with boneless skinless thighs (thought it was breast meat until I started cutting it up), garlic, shallots, artichoke hearts, capers, lemons and a white wine sauce.  Only thing that could have been improved would have been to use chicken breasts instead of thighs, but with the way I pan fried it and let it cook for awhile in the sauce they were still pretty tender.

One of the things I love so much about food is the experimentation.  I am a big fan of trying new recipes and making them my own.  When you let loose and have fun in the kitchen, you realize how easy it is to create an amazing home cooked meal!  I hope that you enjoy this food journey with me and come back often to see what’s cooking….
